Did Easter sneak up on you like it did for me? Up until last week, I thought Easter was going to be in April.

Then I got the wonderful news that the twins will be here for Easter (they're usually with their mom, while Chris and I do an all-day movie marathon and eat candy)! This will be our first Easter where we actually get to do traditional Easter things as a family, and I couldn't be more excited. Since the twins are pre-teens now and because we're vegan and don't want anything to do with eggs, Chris and I are planning a plastic egg hunt. Each of the eggs will be filled with $1-5 dollars (though, there will be two eggs with $10 each) and candy (I've stocked up on their favorite veganSurf Sweets candy. Please research before you buy, though, because not all of their products are vegan.). Then we can have an actual Easter brunch! I am just so excited!

I've been happily putting together a menu for this Sunday and here are some wonderful vegan Easter recipes that I have in mind:

    Wow! I want to make one of everything! So glad to know there really are vegan M&Ms! I miss making M&M cookies and Monster cookies!
    And I can give two thumbs up to the Deluxe Chocolate Marshmallow Bars -- I made those a couple months ago and they were a-maz-ing.

      I'm so glad you liked the chocolate marshmallow bars- It's been awhile so I think I need to make them again soon! And those m&m's... They are so good (crunchier than the original, but I liked it), but they're always sold out. If you can get your hands on them, but a few bags! 🙂

    You will have so much fun with the twins! I've never been on the organizing end of a plastic egg hunt. It will be such a delight to see the excitement on their faces as they open up each one, eager to see what's inside. As adults, it's easy to let most holidays just pass by without taking much time to celebrate. Having kids around makes for a good excuse to just enjoy the day!

      I know- I'm so excited about it! My best friend's family does it every year, even though the kids are all adults now and they still have a blast. I hope the twins have fun with it. 🙂

    Wow! All of these look delicious! I wasn't planning on making anything fancy but this post might have me reconsider. We usually go out to enjoy mimosa brunch on easter, a tacky tradition 🙂 I can't wait to try the carrot cake waffles.

    Those m&m cookies are so adorable! I can’t remember the last time I had an m&m cookie, but it’s great to know there’s a vegan alternative. I think I’ll have to buy some right away!       I would try my Seitan Mushroom Loaf (link is above in the post) or maybe Sunday Morning Banana Pancake's Rustic Asparagus Quinoa Tart (link is also in post). I also have a stuffed Seitan Roast and a Lentil Mushroom Meatloaf in my book, But I Could Never Go Vegan! Both of those would be great options as well. If you want to purchase something, Field Roast makes a great Celebration Roast which Iv'e made several times. I believe Gardein also has some sort of roast in the freezer section. They're worth looking into. Good Luck!
