There is a million chicken casserole with poppy seeds recipes out there but I’m about to tell you why mine is the best chicken casserole with poppy seeds recipe—because it’s the easiest. Now that’s what I’m talking about. I mean who has time to dirty 72 dishes and be in the kitchen for 3 hours an evening? Not me. I need convenient, quick, easy, and most of all, I need it to be something my kids love. This chicken casserole with poppy seeds recipe is one of my go-to recipes over the years and I have perfected it to a fine art. If you make it the way I’m suggesting, you will end up with only one dirty bowl to clean. You’re welcome.
Here’s what you will need.
A Rotisserie chicken (I buy this at Sam’s or Reasor’s)
1 can cream of mushroom soup (I but the low fat)
1 can of cream of chicken soup
1 stick of butter (or 2 if you want it to be extra delicious)
1 cup of sour cream
3 tubes of Ritz crackers
2 tbsp poppy seeds
First off, shred the chickenin the 9×13 pan you plan to bake it in.
I have this handy tool I love to use for shredding the chicken but a plain old fork works as well.
This was about 4 cups of chicken.
Pour the cream of chicken and cream of mushroom over the chicken.
Add a cup of sour cream. I don’t even measure I just spoon it in because why dirty a measuring cup?
Mix it all together.
Now, here is where you are going to have to dirty that bowl. Melt your butter in the bowl. I use one stick when I’m making this for our family but I’m not going to lie: it’s better with two sticks and when I’m making it for company or to take meals to someone, I use two sticks.
Now open your first tube of Ritz crackers and start working from the top, crushing the crackers. Again, no need to dirty another bowl for this when you can just crush them in the tube!
Crush three tubes of Ritz crackers. Add Poppy seeds and mix well
Pour the cracker mixture over the top.
There you have it. I did all of that prep in 5 minutes flat and only had this bowl and a couple of utensils to clean. Again, this iswhat makes my chicken casserole with poppy seeds recipe the best—less clean up!
Bake at 350 degrees for 30 minutes until the center is bubbly. I usually cover it with foil for the first 15 minutes then uncover it for the last 15 min.

Ingredients
- 4 cups shredded, cooked chicken (I use Rotisserie)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 cup sour cream
- 2 sticks butter (can use 1 stick for lighter version)
- 3 tubes Ritz crackers
- 1-2 Tbsp Poppyseeds

Recipe Notes
- Shred chicken
- Add cream of mushroom, cream of chicken, and sour cream. Mix well
- Melt butter. Add crushed Ritz crackers and poppy seeds. Mix well.
- Pour Ritz cracker mixture over the chicken mixture
- Bake 350 degrees for 30 minutes. Cover with foil for the first 15 min then uncover for the last 15 minutes
