How to Make French Onion Beef and Noodles

You’ll love how easy this one-pot meal is!

1. Brown the beef cubes. Heat the olive oil in a pot. Season the beef cubes with salt and pepper. Brown the beef on all sides and set aside.

2. Caramelize the onions. Reduce the heat, and add butter to the pot. Cook the sliced onions until very soft and caramelized, about 25-30 minutes.

3. Add the garlic and wine. Stir in the minced garlic and cook for 1 minute. Pour in the red wine and simmer until mostly evaporated, scraping up the browned bits.

4. Add the liquids and seasonings. Stir in the French onion soup, beef broth, Worcestershire sauce, thyme, salt and pepper. Return the browned beef to the pot.

5. Braise the beef. Bring to a boil, then reduce the heat and simmer covered until the beef is very tender, about 1-1.5 hours.

6. Cook the egg noodles. Stir the uncooked egg noodles into the pot and simmer uncovered until tender, about 10 minutes.

7. Add the cream cheese and sour cream. Remove from the heat. Stir in the cream cheese and sour cream until smooth. Stir in the shredded Gruyère cheese.

8. Serve with crispy onions. Serve hot, topped with crispy fried onions.

Tips for the Best French Onion Beef and Noodles

Follow these tips for a meal you’ll never forget.

  • Buy the best beef. Use chuck roast or stew meat cut into 1-inch cubes for tender, flavorful beef.
  • Pick your pasta. Wide egg noodles are classic, but any sturdy pasta like pappardelle or fettuccine works well.
  • Amp up the seasoning. Don’t be shy with the salt, pepper, garlic, and herbs like thyme or a bay leaf. Well-seasoned beef and broth are key to a tasty dish.
  • Have fun experimenting. Try adding sautéed mushrooms, using ground beef instead of stew meat, topping with shredded Swiss cheese, or stirring in frozen peas.
  • Make it a meal. Serve hot, topped with crispy fried onions. Pairs well with a side of green vegetables like broccoli or green beans.

How to Store

Leftover beef and noodles make for wonderful lunches throughout the week!

To Store: Place leftovers in an air-tight container and refrigerate for up to 3-4 days. Ensure the container is sealed properly to maintain freshness.

To Freeze: Cool completely before transferring to a freezer-safe container or bag. Leftovers can be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.

To Reheat: For best results, reheat in a skillet over medium heat, adding a splash of beef broth or water to prevent drying out. Stir occasionally until heated through, which typically takes about 5-7 minutes.
