Other than the sausage, there's not much adding flavor to the soup, so I modified it quite a bit, hence my rating and title that this is a good starting point for soup, which you can modify as you like. It is very quick to prepare once your ingredients are prepped. I used Spanish chorizo (as that's what I had on hand) and while sauteing the sausage I added chopped onion, garlic and red bell pepper to add some additional flavor. I also added some prepared Israeli couscous and a splash of balsamic vinegar to the individual servings.

The best thing about this recipe is it's amazingly FAST--about 15 minutes or so. I expect I'll make this again and again when I need a healthy dinner quickly. It's also really good. I think a couple of things are key: 1) whatever kind of sausage you use, make it spicy. Because this recipe doesn't cook long enough for the flavors to blend, you want something strong to stand out. I used spicy Italian, and it was great. 2) Add a little extra something. I started out with a little chopped onion, and some of my chicken broth was garlic-infused. I served with a hearty loaf of bread and dinner was a hit.

I used andouille sausage and that gave the soup tons of flavor. I love that it was so quick to make and with so few ingredients.

I get a lot of kale in my garden and this is one of my go-to ways to use it. My teenagers love it and it's super easy to make.

This soup was a hit with my family! Even my picky children (ages 6,4,1) ate it. I added 3 cloves of garlic and some salt. I also sprinkled shaved parmesan on top. We will make it again soon.

This soup was very comforting and nourishing. Perfect for the cold evening. I added chopped red onion and garlic, followed the recipe and the recommendation to add cajun seasoning (1/4 tsp) and pepper. Very yummy. I love that is so simple and quick to prepare.

Needs spices. I used andouille sausage as I couldn't find a Cajun spice one. I then added Cajun spice. Outcome was okay but I don't think I will make again.

This was good, I'm only giving it 4 stars because there's nothing exceptionally spectacular about it. I used low fat chicken sausage, and added some onion and garlic, because onion and garlic.

Simple, quick meal with lots of flavor. I used chicken chorizo sausage and garbanzo beans. I started with 1 chopped onion and a couple cloves of garlic, added stem part of the chopped kale and sautéed fro a couple minutes before adding the sausage, etc..

Yummy! I made only 3 changes: Used spicy Italian sausage and doubled it. I used Italian seasoned diced tomatoes (it was all I had in the pantry). I added a bit of garlic (I LOVE garlic). Came out great - A definite keeper!

Always delicious! Made with Cajun sausage and added some black pepper. Most recently I used frozen collards instead of kale. Yummy.

This soup was so hearty and delicious! I used chorizo sausage and added some garlic, cumin, salt, and pepper. Don't let the kale scare you! It's really mild in this soup.

This soup was surprisingly yummy and only took about 10 mins, including cutting and washing the kale. I made a few minor changes: I used an entire box of chicken stock (which is 1 only extra cup), I used hot Italian Johnsonville sausage and I doubled the amount of sausage the recipe called for (personal preference). In my opinion, the soup came out perfectly. Just a normal amount of salt and pepper and it was perfectly seasoned. I will definitely be making this recipe again.

Very good. I used regular Italian sausage and turnip greens (or was it collards? I had both) and it's delicious. I suggest that you cut the sweet potatoes up smaller - they seem to plump up when they cook. Also, the potatoes turn a wierd brown/gray when the soup is stored in the fridge, but they brighten back up when the soup is reheated.

As is, I'd wager that this was a fairly bland but easy soup. I used italian sausage and added a little bit of dried oregano, basil, and rosemary to the mix. Just those few changes made it a very tasty dinner and lunch.

This soup is so easy! I actually subsitute the Mild Turkey Sausage and use the bagged spinach. All it needs is a little extra pepper. Easy and Delicious quick night dinner!
